I wanted to make something with eggs, and what better way than to spice up your hard boiled ones. This was such a treat! I’ve labeled them as eggs cups for lack of a better word, but they are really just boiled eggs in the shape of cracked eggs. Cute, right?
Initially, I boiled 6 eggs. The first 2 for experimental reasons, and of course, I made a few mistakes. I also purchase red cabbage and that didnt turn out to serve the purpose I intended, but you learn and it’ll be better next year! The first thing you do, is boil the eggs. I like to bring my eggs a full boil, then take them off the heat completely. For this particular project, I left them inside the shell overnight, to ensure the egg white was solid enough to hold it’s shape.
Next, you’ll have to cut a little bit from the bottom to ensure the egg can stand straight up. Unless, it boils with an indentation, in which case it will hold it’s own, upright.
After that, you’ll need to cup approximately one third off of the top with a small paring knife. (hang on tho the leftovers).
Then, proceed to make a ‘V’ shape slicing down from top to bottom and up again in diagonal form. When you’re done, you will have a zig zag shape throughout the egg. Using a small spoon, scoop out the contents set them aside.
I purchased half a lb. of prepared cole slaw at the Deli market and styled it to resemble a bird’s nest. I mixed all of the egg yolks along with the remaining pieces of egg white to make a little salad and scooped it into the egg cups.
My red cabbage didnt workout the way I intended, primarily because I never thought to boil it. But also, I wasn’t entirely happy with how strong the purple looked against the white eggs. Maybe next year I’ll find a way to make it more pastel-ish! I topped my eggs with a few chopped pieces for an added pop of purple and that made it al the more festive.
